Lassi n Cafe is a brand offering healthy and authentic lassis, along with a wider range of cafe fare like burgers, sandwiches, juices, and shakes, emphasizing quality and affordability in a cafe ambiance

The Challenges
Taking a beloved, local café concept centered around lassi and Indian snacks and turning it into a replicable, national franchise was a complex task. Some of the major challenges included:
Inconsistent Product Quality: Since lassi is a fresh, dairy-based product, maintaining a consistent taste and texture across multiple locations and different regional suppliers was a major hurdle. Perceived as a Niche Offering: The menu was seen as too focused on traditional Indian beverages and snacks, limiting its appeal to a broader, year-round customer base. Lack of Operational Blueprint: The original café relied heavily on the personal expertise of the owner-operator. There were no documented standard operating procedures (SOPs) for preparation, service, or inventory management. Unscalable Store Design: The existing store layout was charming but inefficient, designed for low-volume operation and not suitable for quick, high-turnover service required in a franchise model.

Our Approach
We structured our work with Lassi n Cafe into four key phases:
Phase 1: Menu Expansion and Optimization We broadened the product portfolio to include complementary, non-seasonal items like coffee, quick-serve savory bites, and all-day breakfast options. This diversified the revenue streams and made the concept appealing beyond the core lassi-loving customer base. We retained the core recipes but standardized the ingredient ratios for perfect consistency.
Phase 2: Standardization and Supply Chain Blueprint We developed comprehensive Standard Operating Procedures (SOPs) for every step: lassi preparation, temperature control, equipment maintenance, and customer service. We then created a tiered supply chain strategy, identifying key vendors for critical, proprietary ingredients to ensure consistent quality and taste across all future outlets.
Phase 3: Franchise-Ready Design and Layout We engineered a modular, efficient store design that maximized service speed (throughput) while reducing the required kitchen space and staff training time. The new aesthetic was bright, clean, and modern, repositioning the brand as a sophisticated, contemporary café rather than just a traditional beverage shop.
Phase 4: Pilot Program and Franchise Framework We implemented the new systems and design in two pilot franchise units in different cities to stress-test the operational framework and supply chain. Simultaneously, we finalized the Franchise Disclosure Document and training programs, creating a robust, low-risk investment package for potential franchisees.
